MOLASSES GINGER BREAD.
One cup of butter, one of molasses, one of sugar, one of sour milk, one teaspoon of soda, one tablespoon of ginger, one egg, four cups of flour.
MOLASSES COOKIES.
Two cups of molasses, one of sour milk, half cup of butter, one large spoon of dry saleratus, dissolved and put into the sour milk, a full teaspoon of ginger, flour to roll as soft as possible to handle, and take it from the oven almost before it is done; bake quickly.
SUGAR COOKIES.
Two cups of sugar, one cup of butter, one cup of milk, two eggs, one teaspoon of soda, two teaspoons of cream of tartar, or two teaspoons of yeast powder if the milk is sweet, spice to taste; I prefer nutmeg.
COOKIES.
Two cups of sugar, five cups of flour, four tablespoons of milk, two eggs, one cup of butter, caraway seed, two teaspoons of yeast powder.
NICE PLAIN COOKIES.
One cup of sour milk, one teaspoon of soda, one cup of lard, two cups of sugar; flavor highly with lemon, mix stiff with flour, and roll thin; a little salt.
RICH COOKIES.
Three cups of sugar, one cup of butter, two-thirds cup of water, three eggs, two teaspoons of yeast powder, flour sufficient to roll out quite soft, spice as you please.
PLAIN DOUGHNUTS.
One cup of sugar, one cup sour milk, with a scant teaspoon of soda, one or two eggs, one large spoon of melted butter, allspice for flavoring; flour sufficient to roll out.
DOUGHNUTS, No. 2.
One pint of flour, half pint of sugar, three eggs, a piece of butter the size of an egg; mix the sugar and butter, add the eggs, and add milk enough to mix them, with half a teaspoon of soda in the milk, a little nutmeg.
CRULLERS.
Four eggs, five large spoons of melted butter, four large spoons of milk, eight large spoons of sugar, one small teaspoon of soda in the milk, nutmeg, flour sufficient to roll out. Nice.
CRULLERS, No. 2.
Five eggs, five spoons (large spoons) of melted butter, eight of sugar, two of water, one small teaspoon of soda, a little nutmeg; fry in hot lard; flour as above.
CRULLERS, No. 3.
Five eggs, ten tablespoons of sugar, seven tablespoons of melted butter, one small teaspoon of soda dissolved in a teacup nearly full of milk, spice; flour as above.
CRULLERS, No. 4.
Three eggs, six tablespoons of sugar, three tablespoons of melted butter, two of milk, two of yeast powder and a little nutmeg; flour as above.
JUMBLES.
One cup of butter, five cups of flour, two of sugar, four eggs, one-third cup of milk, one teaspoon of soda, spice to taste.
TIPSEY CAKE.
Cut in halves one loaf of sponge cake, place in two glass dishes, stick it full of blanched almonds, quartered, wet the cake with wine, drop jelly upon it, then have ready a nice custard and pour over it.
ICE CREAM CAKE.
Two cups of sugar, one of butter, one of milk, whites of six eggs, three cups of flour, two teaspoons of yeast powder.
